Vegetable Beef Soup

Instructions

  1. Brown the beef
    Heat olive oil in a large pot over medium-high heat. Add the beef cubes and sear for 4–5 minutes until browned on all sides. This step builds a deep, rich flavor.
  2. Sauté aromatics
    Add the chopped onion and garlic. Cook for 2–3 minutes until fragrant and slightly softened.
  3. Add vegetables
    Stir in the carrots, celery, and potatoes. Let them cook for 3–4 minutes, allowing the flavors to start blending.
  4. Build the broth
    Pour in the beef broth and diced tomatoes. Add thyme, paprika, bay leaf, salt, and pepper. Stir well.
  5. Simmer
    Bring the soup to a boil, then reduce heat to low. Cover and let it simmer for 30–40 minutes, until the beef is tender and the vegetables are cooked through.
  6. Add final ingredients
    Stir in green beans (and corn or peas if using). Cook for an additional 10 minutes.
  7. Finish and serve
    Remove the bay leaf. Taste and adjust seasoning if needed. Serve hot.
