- Lightly grease the inside of your slow cooker to prevent sticking and make cleanup easier.
- Place the chicken breasts (or thighs) in a single layer at the bottom of the slow cooker. It’s fine if they overlap slightly.
- Sprinkle the dry ranch seasoning mix evenly over the chicken, making sure each piece is coated with flavor.
- Scatter the cubed cream cheese over the top. Spreading it out helps it melt evenly into the sauce.
- Cover with the lid and cook on LOW for 4–5 hours (or HIGH for 2½–3 hours), until the chicken is tender and easily pulls apart with a fork.
- About 30 minutes before the end of cooking, gently stir the mixture. The cream cheese will have melted into a thick, creamy base.
- Add 1½ cups of shredded cheddar cheese and stir until fully melted and combined into the sauce.
- Once the chicken is fully cooked, use two forks to shred it directly in the slow cooker. The meat will soak up the rich, cheesy sauce.
- Sprinkle the remaining ½ cup cheddar cheese over the top, cover, and let it melt for a few minutes until gooey and irresistible.
- Taste and adjust with black pepper if needed. Serve hot.
