If you love traditional street-style tacos, these suadero tacos are a must-try. The beef is slowly cooked until perfectly tender, then lightly browned to create a delicious combination of juicy texture and rich flavor—just like the tacos served at authentic Mexican taquerías.

Ingredients

For the Suadero Beef

  • 3.3 lbs (1.5 kg) beef suadero
  • 4 cups water or beef broth
  • ½ white onion
  • 4 garlic cloves
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 tablespoon salt, or to taste
  • 2 tablespoons pork lard or cooking oil

For the Tacos

  • 24 corn tortillas
  • 1 finely chopped white onion
  • 1 small bunch fresh cilantro, chopped
  • Lime wedges
  • Green or red salsa, to taste
  • Cambray onions (optional)
  • Sliced radishes (optional)

Instructions

1. Cook the Suadero

Place the beef suadero in a large pot with the water or beef broth, onion, garlic cloves, bay leaves, oregano, cumin, black pepper, and salt.

Cover and cook over medium-low heat for about 1 hour and 30 minutes, or until the meat becomes extremely tender.

Check the liquid level while cooking. If too much evaporates, add a little more hot water to keep the meat moist.

2. Chop the Meat

Remove the suadero from the pot and let it rest for a few minutes.

Cut the meat into small pieces or finely chop it, just like it is traditionally served at Mexican taco stands.

Reserve about ½ cup of the cooking broth for later.

3. Brown the Suadero

Heat a large skillet or griddle and add the pork lard.

Add the chopped beef and cook over medium-high heat for 5–8 minutes, stirring occasionally, until some pieces become golden and slightly crispy.

Add a few tablespoons of the reserved broth while browning the meat. This keeps the suadero juicy, tender, and full of flavor.

4. Warm the Tortillas

Heat the corn tortillas on a hot griddle or skillet.

For authentic taquerĂ­a-style tacos, use two tortillas per taco to make them stronger and easier to enjoy.

5. Assemble the Tacos

Place a generous portion of suadero on the warm tortillas.

Top with chopped onion and fresh cilantro.

Serve with lime wedges, green or red salsa, cambray onions, and radishes if desired.

Quick Green Salsa

Ingredients

  • 6 tomatillos
  • 2 serrano peppers
  • ÂĽ white onion
  • 1 garlic clove
  • A small handful of fresh cilantro
  • Salt, to taste

Preparation

Boil the tomatillos and serrano peppers for about 5 minutes until they slightly change color.

Blend them with the onion, garlic, cilantro, and salt until you get a slightly thick salsa.

Taste and adjust the seasoning if needed.
